What is a Proving Basket?

A proving basket lends support and shape to dough during proving. By letting the dough rise in the proving basket, it will provide the loaf with form and shape. It will also absorb moisture from the crust before you turn it out onto a tray to bake. This very thin, drier outer layer means you can easily cut the dough and create beautiful decorative patterns on your loaf of bread.

Bread is not baked in proving baskets. The baskets are used only to give your bread shape and structure like that of traditional artisan bakeries.

Proving baskets have been the traditional way of proving bread for centuries. Creating beautifully shaped dough and thin,crispy crusted bread. Proving baskets have long been used by novice and professional bakers.

Made of 100% Rattan

Our bread proving baskets are made of sustainable food-safe, full-bodied natural rattan. This makes them sturdy and a go-to baking accessory whether you’re a beginner baker or a pro.

Two lovely shapes

Get our proving baskets in these two lovely shapes, round and oval, which can both hold 450g to 500g of dough. The round proving basketis approximately 23cm wide and 9cm deep, while the oval proving basket is approximately 25cm long, 15cm wide and 8cm deep.

Comes with a linen liner

Our Bread Proving Baskets come complete with a 100% linen liner which you can easily remove, wash and reuse. Use the liner for a smoother finish on your round or oval loaves. Proving dough without the liner will give you beautiful concentric, ridged lines on your finished loaves.

How to use a Proving Basket?

Dampen with water and then sprinkle with a generous amount of flour. The water will help the flour stick to the basket. Tap the basket upside down to remove any excess flour. This only needs to be done the very first time you use your proving basket.

Each time before you use the proving basket, dust the proving basket with more flour - the same flour you used for your dough will do. Once the dough has risen, you can just carefully turn over the dough onto a silicone baking mat and the dough will fall out automatically.

Proving Basket Aftercare

There is no need to wash our proving baskets. You just need to dust off the excess flour. Our ThermiSweep is perfect for this, and then let your basket completely dry in a warm place. Avoid storing your proving basket when it is damp as it can form molds while in storage. In any case that you see traces of mold in your proving basket, place it in a pre-heated oven for 30-40 minutes at a temperature of 120 °C to 140 °C to kill the mold.
