Discover How to Use Your TM31 or TM5 for Sous Vide Cooking

A lot of ThermomixⓇ owners are looking forward to the launching of the new TM6 because of its sous vide capability and other functions.

But what if I tell you that you can also sous vide with your TM31 or TM5?

Yes, you’ve read it right! YouCAN sous vide with your ThermomixⓇ regardless if it’s a TM5 or TM31.

Sous vide/sü-ˈvēd/ is a French method of cooking food slowly in a vacuum-sealed pouch at a low temperature to retain the juice and aroma of food.

So here are some tips on how you can sous vide with your ThermomixⓇ:

  1. When choosing your steak, make sure that it will fit in the simmering basket. What I usually do is, cook 2 small pieces of meat roughly 170-175g each that is not thicker than 2.5cm.
  2. Put your meat, fish or veges in a plastic bag and seal it with a vacuum food sealer. If you don’t have a vacuum sealer, you can also use a resealable bag and squeeze all the air out before sealing. It is essential that no water gets in the bag to achieve the perfect texture and consistency.
  3. You can add some herbs and spice on your meat but please make sure not to add any salt to your meat as it will drain the juice from the meat.
  4. To sous vide in your TM31 or TM5, add 1.5 litres of tap water to the mixing bowl then place your simmering basket inside the bowl. Add your meat one on each side before adding more water. Make sure that your meat is fully submerged in water.
  5. Before putting the lid and the MC in position, ensure that the bag is not protruding out of the bowl.

  7. Lastly, to add more flavour and colour to your food, sear them in a pan after you’ve finished sous vide. Just be careful not to overcook your meat.
