Use Your Thermomix® TM31® and TM5® Appliances for Sous Vide Cooking

Many Thermomix® Appliance owners were looking forward to the launching of the newest Thermomix® TM6®  Appliance because of its sous vide capability and many other functions.

But what if I tell you that you can also sous vide with your Thermomix® TM31® and TM5® Appliances?

Yes, you’ve read it right! YouCAN sous vide with older models of Thermomix® Appliances!

Sous vide/sü-ˈvēd/ is a French method of cooking food slowly in a vacuum-sealed pouch at a low temperature to retain the juice and aroma of food.

So here are some tips on how you can sous vide with your Thermomix® Appliance:

  1. When choosing meat or fish, make sure that it will fit in the Simmering Basket. What I usually do is cook 2 small pieces of meat or fish roughly 170-175g each that is not thicker than 2.5cm.
  2. Put your meat, fish or veggies in a plastic bag and seal with a vacuum food sealer. If you don’t have a vacuum sealer, you can also use a resealable bagand squeeze all the air out before sealing. It is essential that no water gets in the bag to achieve the perfect texture and consistency of your sous vide meal.
  3. You can add some herbs and spice on your meat but do not add any salt to your meat as it will extract juices from the cooking meat.
  4. To sous vide in your Thermomix® TM31® or TM5® Appliance, add 1 litre of tap water to the Mixing Bowl then position your Simmering Basket in the Mixing Bowl.
  5. Add your sous vide bags one on each side of the Simmering Basket before adding more water. Make sure that your meat is fully submerged in water.
  6. Before putting the lid and the MC in position, ensure that the sous vide bags are not protruding from the Simmering Basket.

  8. Lastly to add more flavour and colour to your food, quickly sear your cooked fish or meat in a pan after you’ve finished sous viding. Just be careful not to overcook your meat.
