Vegan Potato Salad for a Crowd

This healthy recipe with your Thermomix® Appliance is perfect if you are looking for a dairy, egg and meat-free potato salad to serve at your next BBQ, picnic or family gathering.

This serving size will easily feed up to 10 or 12 people at your next BBQ as a side dish. It tastes so good and the creamy cashew sauce is divine!

Ingredients: 

  • 370g raw cashews
  • 2000g baby potatoes, quartered
  • 450g red onion, quartered
  • 260g water
  • 60g olive oil
  • 50g white wine vinegar
  • 60g Dijon mustard
  • 4 cloves garlic
  • Small bunch fresh dill

Directions: 

  • Weigh cashews into a heatproof bowl and cover with boiling water. Set aside.
  • Place 700g water in Mixing Bowl. 
  • Place Varoma® Appliance dish and V Stacker in place and insert stainless steel trivet in the base. Weigh potatoes into Varoma® Appliance.
  • Cover Varoma® Appliance with lid and steam for15 min/120°C/Speed 2.
  • Stir potato with a spatulato ensure even cooking, then cover Varoma® Appliance with lid and steam for a further 20-22 min/120°C/Speed 2 until potatoes are soft. They should be cooked through but still firm enough that a knife can pierce the centre of the potato. 
  • Remove Varoma® Appliance dish and place potatoes in a large Serving Bowl. Clean and dry Mixing Bowl.
  • Place red onion in Mixing Bowl and chop for 5 sec/Speed 5. Add to a Serving Bowl.
  • Drain cashews and add to Mixing Bowl. 
  • Add water, olive oil, white wine vinegar, mustard and garlic to Mixing Bowl. Process for 1 min/Speed 10 until smooth.
  • Pour over the potato and red onion.
  • Add dill, mix through and serve

TIP: Any herbs can be used in place of the dill.
