Vegan Macaroni and Cheeze

Vegan Macaroni and Cheeze

Looking for a delicious and healthy vegan meal that's quick and easy to make? Look no further than our Vegan Macaroni and Cheeze recipe, made entirely from scratch with wholesome, easy-to-find ingredients with your Thermomix® Appliance.

This dish is bursting with flavour - creamy, cheesy, and ready in under 20 minutes! Best of all, it's completely plant-based, but so delicious you won't even miss the dairy. Give it a try and taste the difference for yourself!

Ingredients:

  • 150g raw cashews, unsalted
  • 400g pumpkin, chopped into 2-3cm cubes with skin on
  • 2 cloves garlic
  • 1200g water
  • 300g macaroni
  • 15g nutritional yeast flakes
  • ½ tsp salt

Directions:

  • Weigh cashews into a small bowl and set aside. Cover with boiling water.
  • Place pumpkin and garlic in the top tray of Varoma® Appliance and place lid in position.
  • Weigh 1200g water into the Mixing Bowl and with Varoma® Appliance in place, steam for 10 min/120°C/Speed 1.
  • Set Varoma® Appliance aside and add macaroni to the Mixing Bowl. Return Varoma® Appliance into position. 
  • Cook for 11 min/100°C/Reverse Speed 1.
  • Remove Varoma® Appliance and set aside. 
  • Reserve around a cup of pasta water. Drain pasta.
  • Place pasta into Insulated Serving Bowl to keep warm. 
  • Drain cashews.
  • Place steamed pumpkin, garlic, cashews, nutritional yeast, salt and 100g reserved pasta water into the Mixing Bowl. Blend for 1 min/Speed 6.
  • Scrape down sides of the Mixing Bowl with a spatulaand blend for a further 1 min/Speed 8.
  • Pour sauce over pasta in Insulated Serving Bowland mix together.
  • Serve immediately.

*Serves 4.

TIP: Pumpkin can be replaced with sweet potato
