Rich Chocolate Cake With Chocolate Ganache for the Thermomix®

What says “I Love You” more than a rich and moist chocolate cake with a hint of coffee covered in a smooth, glossy chocolate ganache. This is quicky and easy to make and perfect for a rich dessert or as a birthday cake.

For the cake:

  • 180g dark chocolate, broken into pieces
  • 90g butter
  • 110g espresso coffee (or 1 Tbsp instant coffee and 110g water)
  • 80g buttermilk
  • 3 large eggs
  • 270g self-raising flour
  • 210g sugar
  • 25g cocoa powder

For the ganache:

  • 200g dark chocolate, broken into pieces
  • 200g cream 

Line a round cake tin with a Reusable Non-Stick Cake Tin Liner or lightly grease and dust with cocoa powder a round cake tin. 

Preheat the oven to 180°C.

Make the ganache first

  • Place 200g chocolate in the mixing bowl. Blitz 10 sec/speed 9.
  • Scrape down the sides and melt 5 min/37°C/speed 2. 
  • Pour in the cream and stir 20 sec/speed 3.
  • Set aside in a small bowl.

For the cake:

  • Without cleaning the mixing bowl, melt the chocolate, butter and coffee for 2 min/80°C/speed 3. 
  • Add the buttermilk and eggs and mix for 10 sec/speed 5.
  • Scrape down the sides.
  • Add the remaining ingredients and mix for 15 sec/speed 5.
  • Scrape down the sides of the bowl and ensure all of the dry ingredients are mixed through.
  • Pour the cake mixture into the tin and bake for 55-60 minutes or until a skewer pushed into the centre of the cake comes out clean. 
  • Leave it to cool in the tin for 5-10 minutes and before turning onto a wire rack to cool completely.
  • When the cake is completely cool, pour the ganache over the cake allowing it to fall down the sides and smoothing to cover with a TM Essentials Silicone Spatula or palette knife. 

*Serves 14-16. Keeps for 3-4 days.
