Rich Chocolate Cake With Chocolate Ganache

Impress your loved ones with a rich and moist chocolate cake infused with a hint of coffee, and topped with a smooth, glossy chocolate ganache. Using your Thermomix® Appliance, this recipe is quick and easy to make, perfect for a decadent dessert or a birthday celebration.

Not only is this cake a crowd-pleaser, but the versatile ganache can also be used in various recipes, and can be made with dark, milk, or white chocolate. Share this indulgent treat with family and friends and make any occasion extra special. Show your love with every delectable bite!

For the cake:

  • 180g dark chocolate, broken into pieces
  • 90g butter
  • 110g espresso coffee (or 1 Tbsp instant coffee and 110g water)
  • 80g buttermilk
  • 3 large eggs
  • 270g self-raising flour
  • 210g sugar
  • 25g cocoa powder

For the ganache:

  • 200g dark chocolate, broken into pieces
  • 200g cream 

Line a round cake tin with a Reusable Baking Lineror lightly grease and dust with cocoa powder. 

Preheat the oven to 180°C.

Make the ganache first

  • Place 200g chocolate in the Mixing Bowl. Blitz for 10 sec/Speed 9.
  • Scrape down the sides and melt for 5 min/37°C/Speed 2. 
  • Add the cream to the Mixing Bowl and stir for 20 sec/Speed 3.
  • Set aside in a clean bowl.

For the cake:

  • Without cleaning the Mixing Bowl, add the chocolate, butter and coffee and melt for 2 min/80°C/Speed 3. 
  • Add the buttermilk and eggs and mix for 10 sec/Speed 5.
  • Scrape down the sides.
  • Add the remaining ingredients and mix for 15 sec/Speed 5.
  • Scrape down the sides of the bowl and ensure all of the dry ingredients are mixed through.
  • Pour the cake mixture into the tin and bake for 55-60 min at 180°C or until a skewer pushed into the centre of the cake comes out clean. 
  • Leave it to cool in the tin for 5-10 minutes before turning onto a wire rack to cool completely.
  • When the cake is completely cool, pour the ganache over the cake allowing it to fall down the sides and smoothing to cover with a TM Essentials Silicone Spatulaor palette knife. 

*Serves 14-16. Keeps for 3-4 days.

Cant wait to try this, I am not a fan of coffee, will it matter if it is left out? Thankyou. I will leave another comment after we try the cake
