Raspberry Mango Sparkling Wine Cocktail

Enjoy the delicious flavours of raspberries and mangoes in this refreshing sparkling wine cocktail. Made with just a few simple ingredients, this cocktail is easy to make with your Thermomix® Appliance and perfect for any occasion.

Ingredients:

  • 300g raspberries
  • 300g ice
  • 300g sparkling wine
  • 300g mango

Directions:

  1. Add raspberries and 150 grams of ice to the Mixing Bowl. Gradually increase the speed to 8 and blend for 30 seconds, or until well combined.
  2. Add 150 grams of sparkling wine and mix for 10 sec/Speed 3.
  3. Divide the raspberry mixture between four glasses then rinse the bowl.
  4. Add the mango and remaining 150 grams of ice to the Mixing Bowl. Gradually increase the speed to Speed 8 and blend for 30 seconds, or until well combined.
  5. Add the remaining 150g sparkling wine and mix for 10 sec/Speed 3.
  6. Slowly pour the mango mixture into the glasses on top of the raspberry layer.

*Makes 4 glasses

Note: To make the mango layer float on top of the raspberry layer, pour the mango mixture onto the back of a spoon held inside the glass just above the raspberry layer.
