No Bake Lemon Coconut Slice

No Bake Lemon Coconut Slice

This is one of those traditional slices that reminds me of the slices my Mum used to make. The lemon offsets the sweetness of the base perfectly.

It's time to let the kids loose in the kitchen. With no baking time needed, our Lemon Coconut Slice with your Thermomix® Appliance is quick and easy for anyone to make. Perfect to send to school with the kids as it is nut free.

Ingredients

Base

  • 250g packet milk arrowroot biscuits
  • 1 tsp lemon zest, grated
  • 90g coconut
  • 120g butter
  • 180g condensed milk

Icing

  • ½ cup desiccated coconut for top of slice

Directions

For the Base

  • Add crushed biscuits and remaining ingredients to Mixing Bowl. Mix for 20 sec/Speed 5.
  • Press mix firmly into the slice tin or TM Essentials Minicake Mold and refrigerate until firm.

For the Icing
