No Bake Gluten-free Cherry Ripe Slice

This amazing recipe is a healthier alternative to your regular chocolate bars. With cherry flavours that burst in your mouth, our No-Bake Cherry Ripe Slice Recipe with your Thermomix® Appliance is really a must-try.

And because it is a no-bake slice, the kids can easily join in on making this one. Plus it's a dream for those who are gluten free.

Ingredients:

  • 120g raw, unsalted nuts (almonds, cashews, etc)
  • 220g dates, pitted
  • 25g cocoa powder
  • 50g coconut oil
  • 400g tin cherries, drained
  • 120g desiccated coconut + extra to finish
  • 200g dark chocolate, broken into pieces

Directions:

  • Line a slice tin with baking paper or TM Essentials Baking Liner. 
  • Place almonds, dates, cocoa powder and coconut oil in Mixing Bowl and mix for 10 sec/Speed 8.
  • Press base into slice tin using the back of a spoon. 
  • Without cleaning the bowl, place drained cherries, and 120g coconut in Mixing Bowl. Mix for 15 sec/Speed 4. 
  • Freeze for 15 minutes.
  • Melt dark chocolate in a microwave-proof bowl until just melted for around 2 minutes. Check every 30 seconds. 
  • Spread over chilled base. Top with desiccated coconut.
  • Return to freezer for 1 hour.
  • Cut into pieces to serve. 
  • Keep refrigerated for up to 5 days.

*Serves 20-24.

This was delicious, I loved the balance of flavour. But to cut it was a mess. I notice the picture is not cut, so probably a hint. The chocolate on top just shattered and the underneath layers just fell apart. Will have to try and work out a way to bind it because the flavours really were perfect.
