Margarita Mocktails

Enjoy the classic flavours of a margarita without the alcohol with this easy-to-make mocktail recipe easily prepared with your Thermomix® Appliance. Made with fresh lemons, sugar, and ice, this refreshing drink is perfect for any occasion.

Ingredients:

Lemon sugar

• 100g sugar
• Zest of 1 lemon

Margarita Mocktail Mix

• 3 lemons, halved 
• 750g ice
• 200g water

Directions

Lemon Sugar:

1. Place lemon zest in Mixing Bowl and blitz for 10 sec/Speed 10. Scrape down the sides with aSpatula. 
2. Add sugar and mix for 3 sec/Speed 4. Pour the lemon sugar into a shallow bowl.
3. Run a wedge of lemon around the rim of four margarita glasses or tumblers.
4. Dip the rim of each glass into the lemon sugar. Set aside.

Assembly:

1. Add the remaining lemon sugar to the Mixing Bowl.
2. Remove the zest, white pith and seeds from the halved lemons. 
3. Add the lemon flesh to the Mixing Bowl.
4. Blend for 4 sec/Speed 8. Scrape down the sides of the Mixing Bowl.
5. Add ice and water to the Mixing Bowl.
6. Process for 30 sec/Speed 8. Pour the margarita mocktail into the prepared margarita glasses..
