Coconut Chicken Strips

Coconut Chicken Strips

This low carb recipe with your Thermomix® Appliance is a fantastic paired with your favourite salad. OurCoconut Chicken Strips are really easy to make since most of the ingredients should readily available in your pantry and fridge. 

Ingredients:

  • 600g chicken breast
  • 3 Tbsp olive oil
  • 2 eggs
  • 100g raw almonds
  • 100g shredded coconut
  • 1 Tbsp granulated onion
  • 1 tsp salt

Directions:

  • Preheat your oven to 180°C. Beat the chicken breast between two pieces of Silicone Baking Matsor baking paper until 1cm thick.
  • Cut into thin strips and coat lightly with olive oil.
  • In a separate bowl, lightly beat eggs and set aside.
  • Add almonds to Mixing Bowl and chop almonds for 10 sec/Speed 8.
  • Add coconut, granulated onion and salt, and mix for 5 sec/Speed 4.
  • Set aside in a large bowl.
  • Dip chicken into whisked eggs and then dip into the almond-coconut mixture. Place chicken on to prepared baking tray.
  • Bake the chicken for about 15 minutes at 180°C. Turn and bake for a further 10 minutes until golden.
  • Serve with a salad.
