Gluten Free Sweet Potato and Coconut Loaf

This loaf packs a nutritious punch and is full of healthy sweet potato, ground almonds and coconut made quickly and easily with your Thermomix® Appliance.

This means that our delicious Sweet Potato and Coconut Loaf contains fibre for a healthy digestive system and will fill you up quicker than your average piece of cake. Does this mean we've finally found guilt-free healthy cake?

 

Ingredients:

  • 240g natural almonds
  • 200g sweet potato (skin included), cubed into 2-3cm pieces
  • 50g shredded coconut
  • 4 eggs
  • 65g extra virgin olive oil
  • 110g rice malt syrup or honey
  • 2 tsp baking powder
  • 20g apple cider vinegar
  • ½ tsp ground cinnamon
  • ½ tsp ground nutmeg
  • 1-2 Tbsp sunflower or pumpkin seeds 

Directions:

  • Preheat oven to 180°C
  • Place almonds in Mixing Bowl and grind for 10 sec/Speed 8
  • Add sweet potato and chop for 10 sec/Speed 7
  • Scrape down sides
  • Add remaining ingredients except sunflower/pumpkin seeds. Mix for 15 sec/Speed 5
  • Pour into a loaf tin lined with a Reusable Non Stick Baking Liner or grease loaf tin lightly with oil
  • Sprinkle sunflower/pumpkin seeds on top
  • Bake for 45 min at 180°C until golden and a skewer inserted in the middle comes out clean
  • Remove from the oven and leave to cool in tin for 10 min
  • Remove from loaf tin and allow to cool on a wire tray

Hi Debbie, could you substitute another nut (such as macadamia or cashew) for the almonds.
