Gluten Free Rich Chocolate Cake

This gluten free rich chocolate cake has the added natural sweetness from apples and delicious nutty flavours. and all it needs is to be finished off with a dusting of cocoa powder.

It may seem surprising to see potatoes in this recipe, but these give our cake structure and keep it moist. And one of the great things, is that it made in no time with your Thermomix® Appliance. It tastes so good, you would never guess it was gluten free.

Ingredients:

  • 300g almonds
  • 150g potatoes, washed and quartered (no need to peel)
  • 150g apple, quartered and cored (no need to peel)
  • 180g dark chocolate, broken into pieces
  • 200g butter, cubed
  • 200g white sugar
  • 3 large eggs
  • 2 tsp baking powder
  • 60g cocoa powder

Directions:

  • Preheat the oven to 160°C.
  • Grease  a round cake tin with oil and dust with cocoa powder.
  • Grind the almonds for 10 sec/Speed 8. Set aside.
  • Without cleaning the bowl, add the potatoes and apple and chop for 10 sec/Speed 8. Set aside with the ground almonds.
  • Place the chocolate, butter and sugar in Mixing Bowl and melt for 3 min/80°C/Speed 2.
  • With the blades running at Speed 3, add the eggs one at a time over 30 seconds.
  • Add the reserved almonds, potato and apple puree, baking powder and cocoa powder and mix for 15 sec/Speed 5. 
  • Scrape down the sides of the bowl and mix for a further 10 sec/Speed 5.
  • Pour into the cake tin and bake for 45-50 minutes at 160°C until a skewer inserted into the centre comes out clean.
  • Allow to cool in the tin for 10-15 minutes before turning onto a plate. When cool dust with cocoa powder.

*Serves 12-14. Keeps for 2-3 days.
