Gluten Free Choc Chip Cookies

Gluten Free Choc Chip Cookies

These gluten free chocolate chip cookies with your Thermomix® Appliance are soft and fluffy with just the right amount of sweetness. No one will ever guess these cookies are made with chickpeas instead of flour. My favourite go to gluten free cookies!

Ingredients:

  • 400g can chickpeas
  • 160g smooth peanut butter
  • 50g rice malt syrup
  • 1 tsp vanilla paste or 2 tsp vanilla essence
  • 1 tsp baking powder
  • 100g choc chips

Directions:

  • Preheat oven to 180°C.
  • Drain chickpeas, rinse, place on a plate and pat dry with paper towels.
  • Place chickpeas, peanut butter, rice malt syrup, vanilla paste, and baking powder in Mixing Bowl and mix for 20 sec/Speed 6. Scrape down sides.
  • Mix for 30 sec/Speed 5 until smooth. Scrape down sides.
  • Add choc chips. Mix for 10 sec/Reverse Speed 2.
  • Using a cookie dough scoop or a teaspoon, scoop cookie dough onto a baking tray lined with a non-stick reusable baking lineror baking paper.
  • Bake at 180°C for 12-15 min until golden.
