 Gluten, Dairy and Egg Free White Bread

Finding a delicious gluten-free bread can be a challenge, but our recipe for gluten-free bread made with the Thermomix® Appliance is a game changer. It has a crispy crust, a soft texture, and is the closest thing to wheat bread that we've found. You won't have to worry about it crumbling when you slice it or feeling cake-like.

It's important to note that the dough quantities shouldn't be increased, as the loaf will only rise halfway up the loaf pan wall. We recommend buying potato flour, tapioca flour, and corn flour in bulk bins at your local health food store. This recipe makes one 900g loaf that you won't be able to resist!

Ingredients:

130g white rice
420g tepid water
2 tsp instant dried yeast
35g olive oil
130g potato flour
130g gluten-free corn flour
65g tapioca (arrowroot) flour
1 tsp salt
2 tsp sugar
2 tsp xanthum gum

Directions:

  • Mill the rice for 2 min/Speed 10.
  • Add remaining ingredients in order specified and mix for 15 sec/Speed 4. 
  • Scrape down the sides and mix for a further 15 sec/Speed 5.
  • Spoon the mixture into lightly oiled TM Essentials Loaf Pan. Using the back of a large spoon dipped in water, smooth the surface of the bread mixture. Sprinkle with poppy or sesame seeds (optional).
  • Slide the Loaf Pan lid into place and allow to rise in a warm place (I use Defrost setting on the oven 35°C) for 1 hour. Remove the Loaf Pan lid.
  • Preheat the oven to 200°C.
  • Gently place in the oven and pour ½ cup ice in the base of the oven, either on the floor of the oven or on a tray.
  • Bake for 60 min/200°C or until or until an instant-read thermometer shows 95-99°C.
  • When finished, remove from the oven and allow to rest in the pan for 5 minutes before turning onto a wire rack to cool completely before slicing.
  • After baking the TM Essentials Loaf Pan and lid should be wiped clean rather than washed in detergent.

This recipe turned up on one of the emails TM Essentials send. I couldn’t wait to give it a go. So glad I did. This is hands down one of the easiest, fluffiest, best tasting GF breads I’ve tried ( and I’ve tried a lot ). Ingredients are cheap too. I like making my own bread and this will be a weekly loaf for me now.

I make lot of GF breads that usually have many steps and a lot more ingredients. This recipe is fabulous! It’s a great no fuss easy to make and tastes delish! I used 4 teaspoons of psyllium husks instead of the gum and it turned out perfectly. Thank you so much.

This bread is amazing!!!!!!!!!!!! I have been trying to find a gluten free egg free bread for my 4 yr old that ticks all the normal bread boxes. You won’t find one as similar as this. Ticks all the boxes. Easy as. With a nice crunchy crust. Big love. Thank you so much!

Hi Tracey, the gum stops the bread from falling apart. You can use guar gum or xanthum gum.

Hi Pat! Potato flour can be made by cooking potato, dehydrating it and then blitzing it.

Hi Helen. The potato flour helps give the bread structure. I have not had success by leaving it out. Potato flour is available from bulk food stores.

I just made this recipe today and was very impressed. It is certainly the nicest gf white bread I’ve ever tasted!
I actually used brown basmati rice because i didn’t have any white rice, and it made a nice white loaf – I couldn’t tell there was brown rice in it! ! !
