Indian Ghee

Making your own ghee couldn't be easier with the Thermomix® Appliance. While ghee is the preferred fat for Indian cooking, it is perfect for adding to mashed potato and using for general frying. It has a high burn point making it a great stable oil for frying. Making your own ghee is less than 1/3 price than ghee from the supermarket.

Ingredient:

500g butter

Directions:

  1. Melt the butter for 1 hour/100°C/Speed 1.
  2. Strain the ghee through a cotton cheesecloth or Nutmilk Bag to separate the solids.
  3. Store ghee in reusable pouches or jars. Ghee can be stored in the pantry or refrigerator.
  4. Makes 420g ghee.

The solids are burnt pieces of milk solids – there is not much and it’s thrown away.

I used unsalted for this one. But you can use either salted or unsalted butter, whichever you prefer.
