Dark Chocolate and Ginger Slice

Looking for a new recipe to make with your Thermomix® Appliance?Dig in to this luscious slice that has a wonderful combination of rich, sweet dark chocolate and with a thick zingy layer of ginger spiciness in every bite. 

Think caramel slice with the delicious flavours of ginger. And what's even better is that it's perfect to cook with the kids as no oven baking is required.

Ingredients:

For the Base:

  • 50g almonds
  • 50g rolled oats
  • 15g cocoa powder
  • 30g desiccated coconut
  • 30g rice malt syrup
  • 30g coconut oil

For the Filling:

  • 300g crystallised ginger
  • 30g water

For the Topping:

  • 100g dark chocolate, broken into pieces
  • 1 tsp coconut or rice bran oil

Directions:

  • Place all base ingredients in the Mixing Bowl and process 15 sec/Speed 8.
  • Press base into a lined slice tin.
  • Without cleaning the bowl, add the ginger and water and mix for 10 sec/Speed 8.
  • Pour the filling over the base.
  • Place the chocolate and oil in the Mixing Bowl and blitz for 10 sec/Speed 9. 
  • Scrape down the sides and melt for 3 min/37°C/Speed 2.
  • Pour over the slice and freeze for 20 minutes before cutting into squares.

*Makes 16-24 squares. Keep refrigerated.
