Cinnamon Rolls with Cream Cheese Frosting

These cinnamon rolls are beyond compare - a true indulgence for any cinnamon lover. With soft, freshly baked dough swirled with fragrant cinnamon and a generous layer of cream cheese frosting, every bite is pure heaven. And the best part? You can make them at home with your Thermomix® Appliance.

Perfect for a lazy weekend breakfast or a special treat, these cinnamon rolls are sure to impress.

Ingredients

Dough
250g milk
80g butter
2 tsp instant dried yeast
1 tsp salt
100g sugar
2 eggs
600g baker’s flour

Filling

250g brown sugar
80g butter
25g Dutch cinnamon

Icing

220g sugar
5g lemon zest
50g butter
50g cream cheese
15g milk
½ tsp vanilla essence


Directions

Dough

  • Heat milk and butter for 3 min/50°C/Speed 2.
  • Add remaining dough ingredients and mix for 15 sec/Speed 3.
  • Knead for 8 min/Dough function.
  • Transfer dough to a lightly floured TM Essentials Non-Stick Silicone Baking Mat.
  • Wrap dough lightly to protect it from drying out and giving it room to rise.
  • Rest the dough in the oven set to 30°C (defrost setting) for 15 minutes.
  • Punch down and roll out to a large rectangle – the size of the Baking Mat.

Filling

  • Add all filling ingredients to the Mixing Bowl. Mix for 30 sec/Speed 4.
  • Spread the filling over the dough.
  • Roll the dough and cut into 12 strips using a dough cutter or silicone spatula.
  • Cover and let rise for 1 hour in the oven set to 30°C (defrost setting).
  • Remove from oven and preheat oven to 180°C.
  • Bake for 15-20 minutes until golden.

Icing

  • While the rolls bake, mill the sugar and lemon rind for 15 seconds/Speed 9 with the Simmering Basket in place in the Bowl.
  • Add remaining icing ingredients and mix for 5 min/60°C/Speed 2 .
  • Spread icing on rolls as soon as they are removed from the oven.
