Chicken, Cheese and Spinach Triangles

Chicken, Cheese and Spinach Triangles

I love puff pastry and these Chicken, Cheese and Spinach Triangles are delicious! You can make the puff pastry with your Thermomix® Appliance or use frozen pre-made puff pastry sheets.

These are easy to make and you eat them for many meals - lunches, snacks or even as a main meal with vegies or salads.

Ingredients:

  • 50g parmesan cheese, cubed
  • 400g chicken breast cut into 2cm cubes
  • 1 clove garlic
  • 1 onion quartered (apporx 150g)
  • 20g olive oil
  • 250g frozen spinach
  • 200g grated mozzarella cheese
  • 60g pinenuts 
  • 8 sheets puff pastry
  • Milk to brush pastry edges and tops with

Directions:

  1. Preheat oven 220°C
  2. Grate parmesan cheese and set aside
  3. Without cleaning the Mixing Bowl add 500g water. Place chicken on Varoma® Appliance middle tray lined with a TM Essentials Steaming Sheet.
  4. Steam for 15 mins/100°C/Speed 1. Set aside.
  5. Empty water from Mixing Bowl
  6. Place garlic and onion in Mixing Bowl. Chop for 5 sec/Speed 5
  7. Add olive oil oil and sauté for 2 min/100°C/Speed 1 
  8. Add reserved parmesan and mozzarella cheese, spinach, pinenuts and chicken to onion mixture in Mixing Bowl and mix for 30 sec/Reverse Speed 1
  9. Cut pastry sheets into quarters and brush edges of pastry with milk.
  10. Place 2-3 spoonfuls of chicken and cheese mix onto pastry sheets and fold sides to make a triangle
  11. Use a fork to bind edges together
  12. Brush top of pastry triangles with milk
  13. Place triangles on baking paper or Baking Liners on a baking tray and place in oven and cook for 20 mins until golden brown.
