Cheese and Spinach Scrolls

I love to play around with flavours for scrolls using our dough recipe with your Thermomix® Appliance. Just load with a generous amount of fillings of your choice and you will be good to go.

For this recipe I combined a delicious amount of Cheese and Spinach, so tasty everyone will come back wanting more. Ideal for lunch or a snack they are the perfect go to. Expand your list of baking recipes and try  these today! Easily prepared and ready in just over an hour.

Scroll Dough:

  • 360g lukewarm water
  • 2 tsp instant yeast
  • 2 tsp sugar
  • 2 tsp bread improver
  • 1 tsp salt
  • 25g milk powder
  • 20g oil
  • 600g baker’s flour

For the Filling:

  • 60g English spinach leaves
  • 30g olive oil
  • 250g grated mozzarella cheese

Directions:

  • Add all dough ingredients to the Mixing Bowl in the order listed.
  • Mix for 15 sec/Speed 3.
  • Knead the dough for 8 min/Dough function.
  • Tip the dough onto a lightly flouredSilicone Baking Mat.
  • Wrap and rest in a warm place, or prove in an oven set to Defrost Setting at 30°C for 15 minutes.
  • While the dough is proving, place the spinach and oil in the Mixing Bowl. Chop for 10 sec/Speed 4.
  • With the Dough resting on the Silicone Baking Mat, punch the dough flat and using a rolling pin, shape into a large 50 x 35cm rectangle.
  • Spread with the spinach mix and grated mozzarella cheese on top of the dough.
  • Roll the dough into a tube and using adough cutter, slice into 12 equal sized pieces.
  • Place scrolls on asmall silicone mat and cover with the largeSilicone Baking Mat to prevent drying out. Rest in a warm place or in an oven set to Defrost Setting at 30°C for 30 minutes.
  • After 30 minutes, remove scrolls from the oven.  Heat the oven to 200°C.
  • Remove theSilicone Baking Matfrom the top of the scrolls and place scrolls in the oven. Tip  ½ cup ice cubes on the bottom of the oven and reduce heat to 180°C. The ice cubes will create steam and give you a glossy golden finish on the scrolls.
  • Bake for 25-30 minutes until golden.
  • Remove from the oven and serve hot or cold.
