Chai Cupcakes

Do you love chai tea and chai latte? If you do, you’ll enjoy this Chai Cupcake recipe made with your Thermomix® Appliance that’s deliciously irresistible!

The almonds can be left off to make these nut free and ideal for school lunches. Delicious and light, these will bring a smile to everyone big and small. 

Switch out the chai tea with earl grey tea or other flavoured teas for a twist on this recipe.

Ingredients:

  • 130g strong chai tea, cooled 
  • 130g butter, cubed
  • 100g brown sugar
  • 2 eggs
  • 260g self-raising flour
  • ½ tsp nutmeg
  • 1 tsp vanilla essence 
  • 2 Tbsp flaked almonds

Directions:

  • Preheat oven to 160°C.
  • Place butter and sugar in Mixing Bowl and beat for 1 min/Speed 4.
  • Scrape down sides of bowl with a Silicone Spatula.
  • Add chai tea, eggs, flour, nutmeg and vanilla essence. 
  • Mix for 20 sec/Speed 4.
  • Scrape down sides of bowl and mix for a further 10 sec/Speed 4. 
  • Top with flaked almonds.
  • Spoon into cupcake cases and bake for 20- 25 mins at 160°C.

*Makes 12 cupcakes
