Blueberry Pancakes

100g softened butter
340g plain flour
2 tsp baking powder
1 tsp bicarb of soda
60g sugar
2 large eggs
500g buttermilk
Blueberries (fresh or frozen)

  1. Melt butter at 80°C 1½ mins / speed 2
  2. Add remaining ingredients except blueberries
  3. Mix 20 secs / speed 4
  4. Heat frying pan low-medium (non-stick is best) brush with butter
  5. Put batter into frying pan and drop blueberries on to batter
  6. When bubbles form, turn over
  7. After a minute or two turn over to other side
  8. Serve with whipped cream or ice-cream
