BBQ Chipotle Pork Ribs

BBQ Chipotle Pork Ribs

Succulent, smoky pork ribs are tender and finger-licking good. A guaranteed crowd pleaser and super easy to make with your Thermomix® Appliance.


Ingredients

Spice Marinade

100g onion, peeled and quartered
3 cloves garlic
100g brown sugar
1 Tbsp Chipotle chilli powder
1 tsp salt
2 tsp mustard powder
1 tsp ground pepper
150g water
2-2.5kg pork back ribs

Chipotle Barbecue Sauce

50g onion
2 cloves garlic
30g butter
1 tsp paprika
1 tsp Chipotle chilli powder
180g tomato sauce
50g brown sugar
60g apple cider vinegar
10g Dijon mustard
20g Worcestershire sauce

Directions:

Spice Marinade

  • Add onion and garlic to Mixing Bowl and chop for 5 sec/Speed 9. 
  • Scrape down sides of Bowl.
  • Add remaining Spice Marinade ingredients to the Mixing Bowl.
  • Mix for 10 sec/Speed 5. 
  • Remove any excess fat from the ribs and chop into pieces.
  • Place the ribs in a large oven proof dish and spread the spice marinade over both sides of the ribs.
  • Cover with foil or oven proof lid and refrigerate for at least 2 hours, or overnight.
  • Preheat the oven to 150°C.
  • Cook the ribs in the oven dish covered with foil or lid for 2 – 3 hours or until the meat is tender.


Chipotle Barbecue Sauce

  • Add onion and garlic to Mixing Bowl and chop for 5 sec/Speed 9. 
  • Scrape down sides of Bowl.
  • Add the butter, Chipotle Chilli powder and paprika to the Mixing Bowl.
  • Cook for 3 min/80°C/Speed 2. 
  • Add the remaining ingredients and cook for 10 min/90°C/Speed 3. 
  • When the ribs have finished cooking, remove from the oven and remove the foil or lid.
  • Heat the oven to 200°C.
  • Brush the ribs with half of the BBQ sauce.
  • Return to the oven for 10-15 minutes.
  • Serve with the remaining sauce.
