Gluten Free Almond and Coconut Strawberry Friands

Almond and Coconut Strawberry Friands

When making Hollandaise Sauce with my Thermomix® Appliance, I had 4 egg whites leftover.

What do you make when you have egg whites leftover? Gluten Free Almond and Coconut Strawberry Friands. No left-overs ever wasted! Best of all, they are yummy and perfect for lunchboxes or an afternoon treat …

Ingredients:

  • 130g raw almonds 
  • 220g raw sugar
  • 180g butter, cubed
  • 4 egg whites 
  • 75g buckwheat flour (or plain flour)
  • 100g coconut
  • 200g strawberries – 100g sliced for the top, 100g chopped into small pieces for the rest of the friand. 
  • Icing sugar for dusting top

 

Directions:

  1. Preheat oven to 200°C
  2. Grease 12 hole Friand Tin or two of our Silicone Muffin Molds
  3. Place almonds in Mixing Bowl and mill for 10 sec/Speed 8. Set aside in a clean bowl
  4. Place sugar in Mixing Bowl and mill for 4 sec/Speed 9. Set aside in the same bowl as the ground almonds
  5. Add butter and melt for 2 min/90°C/Speed 1
  6. Add egg whites, flour, and reserved sugar and ground almonds and mix for 5 sec/Speed 5
  7. Add coconut and chopped strawberries 5 sec/Reverse Speed 4
  8. Pour friand batter into prepared friand tin or muffin molds
  9. Top each friand with sliced strawberries
  10. Bake 20 – 25 mins
  11. Remove from oven and allow to cool for 5 mins before placing on a cooling rack
  12. Sprinkle with icing sugar when cool
