Salted Caramel Blondie Ice Cream

A couple of days ago, I had a craving for chocolate brownies but I know that we didn't have any at home.

So, I went out to satisfy my sweet tooth when I passed by an ice cream shop.

Well, to make the long story short, I ended up eating vanilla ice cream topped with rich caramel fudge and I was surprised to find out that aside from caramel, they had placed several brownie bits on top of my ice cream too.

And because I enjoyed my ice cream so much with chunks of brownies that day, I came up with my own version of this delicious treat that you can make with your Thermomix® Appliance.

Here is my recipe for...

5 Ingredient No Churn Salted Caramel Blondie Ice Cream

Ingredients:

  • 150g chocolate brownies
  • 600g thickened cream
  • ½ tsp pink rock salt
  • 380g Top’n’Fill caramel
  • 100g Hershey's Caramel Syrup

Directions:

  1. Chop brownies for 5 sec/ Speed 3 then set aside.
  2. Insert butterfly. Add cream and salt. Whisk at Speed 3.5 until thick. Be careful not to overwhip and make butter.
  3. Run the blades at Speed 2 and slowly spoon in Top’n’Fill caramel over 1-2 min.
  4. Add reserved brownies and mix for 5 sec/ Speed 2.
  5. Pour into ice cream container. 
  6. Squeeze caramel over the top of ice cream and mix lightly by running a knife slowly through in a zigzag fashion.
  7. Freeze for 5 hours.
