5 Ingredient Keto Jumbo Spinach And Cheese Stuffed Meatballs

This mouthwatering recipe is a powerhouse of flavour. The perfect topping for your garden-fresh salads at less than 3g of carbs.

Ingredients:

  • 50g parmesan cheese
  • 60g spinach
  • 20g olive oil
  • 500g minced meat
  • 2 tsp Italian Seasoning
  • ½ tsp salt
  • ½ tsp pepper
  • 3 large eggs

Directions:

  • Preheat oven to 120°C
  • Place parmesan in Bowl and chop for 5 sec/Speed 10.
  • Add 20g spinach and olive oil to bowl and mix for 5 sec/Speed 6.
  • Without cleaning the bowl, add remaining spinach, minced meat, Italian seasoning, salt, pepper and eggs. Mix for 10 sec/Reverse Speed 2.
  • Scrape down the sides and repeat.
  • Shape into 6 large meatballs and create a large crevice in the centre of each for the filling.
  • Fill each meatball with the reserved spinach filling. Reshape the meatballs while keeping the filling in the middle and place on a baking dish.
  • Bake for 40 minutes. Serve with garden salad or steamed veggies.
