5 Ingredient Basil and Cashew Pesto

This easy 5 ingredient recipe with your Thermomix® Appliance will make around 1kg of pesto – perfect when have thriving basil plants in your garden. Use this delicious fresh pesto as a dip, mix with pasta, use in filo pastry or use to add to chicken or prawns. Basil pesto is so versatile and easy with your Thermomix® Appliance.

Once you have made fresh pesto, you will never buy pesto from the shops again. This Pesto can be frozen in batches for a quick and easy mid week Pasta with Pesto and Bacon dinner. 

Ingredients

  • 200g Parmesan cheese, cubed
  • 30g garlic cloves
  • 400g unsalted roasted cashews
  • 75g basil leaves (stalks removed) - around 4 large stalks
  • 300g extra virgin olive oil

Directions

  1. Chop Parmesan cheese and garlic for 10 sec/Speed 8.
  2. Add the cashews and basil and mill for 1 – 2 min/Speed 6 until smooth using the spatula that comes with your  Thermomix® Appliance to mix.
  3. Add the olive oil and mix for 30 sec/Speed 6.
  4. Store in clean jars or reusable pouches in the fridge or freezer.
  5. Perfect with pasta, as a dip, on pizza, with salad dressings or in soup.

I could not get the oil to mix with the other ingredients when l added it🤷‍♀️🤦‍♀️
