30-Second Café Style Banana Cake

An incredibly moist and luscious banana cake just like you order at your favourite cafe. The cake batter is ready in only 30 seconds and is ready to eat from start to finish in under an hour. 

  • 390g ripe bananas (3 large bananas)
  • 40g sour cream
  • 3 large eggs
  • 180g butter, room temperature
  • 260g self-raising flour
  • 220g sugar

Directions

  • Line a 23cm loaf tin with a loaf pan liner or lightly grease and flour.
  • Preheat the oven to 170°C.
  • Add the bananas, sour cream, eggs and butter to the Mixing Bowl and mix for 15 sec/Speed 5. 
  • Add flour and sugar and mix for 15 sec/Speed 5.
  • Scrape down the sides of the bowl and ensure all of the dry ingredients are mixed through. If not, use your spatula to incorporate the remaining flour and sugar. 
  • Pour the batter into the lined loaf tin and bake for 55-60 minutes at 170°C until golden brown and a skewer inserted in the centre comes out clean.
  • Leave the cake to cool in the in the tin for 5-10 minutes before lifting out with a the liner onto a wire rack to cool completely.

*Serves 12-16. Keeps for 3-4 days.
